Simon’s Secret Recipe: Creamy Vegan Sun Dried Tomato Pasta

Welcome to the first Simon’s Secret Recipe blog! In this series I am going to walk you through step-by-step, my favorite recipes using Simon’s Secret Sauce. I’ve combined a list of all the fan-favorite and healthy recipes that you need to try asap!

Our creamy vegan sun dried tomato pasta is easy to make, 100% vegan, and extremely delicious. Every guest that I serve this too always comes back for a second or even a third serving! This recipe is easily broken down into two main categories: the sauce, and the pasta itself. To make this recipe even quicker, you can substitute the sauce for your favorite jarred pasta sauce at home. However, don't forget the secret ingredient… keep reading to learn more!

Creamy Tomato Sauce Ingredients

  • Sun dried tomatoes (in oil) ½ cup strained
  • Oil from Sun dried tomatoes 1 tsp
  • Carrots ½ cup diced
  • Celery ½ cup diced
  • White Onion ½ cup diced
  • Lemon Juice 1 tsp
  • Salt, Pepper, Red Pepper Flakes to taste
  • Garlic 4 cloves minced
  • Simon’s Secret Sauce 1 cup


Pasta Ingredients

  • Linguini Pasta 1 box
  • Black Olives Sliced 1 2.25oz can
  • Finely Chopped Parsley to garnish


Pasta Sauce

  1. Add the onion, celery, carrots, and garlic to a medium sized pan and stir to combine. Add salt and pepper to taste, plus the red pepper flakes to add some spice. Cook vegetables for 5-10 minutes, until carrots become tender and soft.
  2. Add the cooked vegetables, sun dried tomatoes, oil, lemon juice, 1 cup of water, Simon’ Secret Sauce, and salt and pepper to taste. Blend on high until smooth and creamy, with no chunks remaining.


  1. Boil the linguini to the specified instructions on the box. Make sure to leave them a little underdone so they finish cooking in the pasta sauce.
  2. Once the pasta is cooked, strain and put back into the pan with ÂĽ cup of the leftover pasta water.
  3. Add your pasta sauce to the linguini and simmer for 5-10 minutes until the pasta is fully cooked and everything is combined.
  4. Top your vegan pasta with the finely chopped parsley and black olives and it is ready to eat.
