Simon's Ding's Crispy Chicken Sandwich

INGREDIENTS

  • Soft Bun
  • 2 Chicken Breast Cutlets
  • 2 Eggs
  • Buttermilk
  • Seasoned Flour (Flour, Baking Powder, Salt, Pepper, Garlic Seasoning)
  • Panko Breadcrumbs
  • Cooking oil (Your choice of canola, peanut, grapeseed etc)
  • Sliced Tomato
  • Baby Swiss
  • Slaw (Thinly Sliced Kale and Green Cabbage)
  • Simon's Secret Sauce (Any Flavor)

DIRECTIONS

For Slaw:
Thinly slice kale and green cabbage and mix well with Simon's Secret Sauce (drench it)
For Chicken:
1. Soak your chicken breast in buttermilk for at least 4-5 hours (longer if possible). Once you’re ready to cook, in 3 separate bowls add seasoned flour (bowl 1), 2 mixed eggs (bowl 2) and panko breadcrumbs (bowl 3). Add each chicken piece in the flour then eggs then panko. 
 2. Add to frying pan with hot oil
 3. Have another pan with some melted butter and toast your buns
