Simon's Grilled Rib Eye

  • INGREDIENTS
  •  
  • 2 pounds boneless rib eye steaks 2 (1-pound) steaks
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon coarse kosher salt (or Simon's Truffle Salt)
  • 1/2 teaspoon coarse ground black pepper
  • 2 tablespoons Simon's Secret Sauce (any flavor)
 
INSTRUCTIONS
 
  • About 20 minutes before you want to cook the steaks, get them out of the fridge and let them come to room temperature.
  • Preheat the grill to around 450 to 500F.
  • Pat the steaks dry with paper towels.
  • Drizzle the olive oil on both sides of the steak, and then season both sides with the salt and black pepper.
  • Gently rub the seasonings into both sides of the steak.
  • Place the steak on the grill, brush some Simon's Secret Sauce on top of the steak, close the grill, and cook for about 6 to 8 minutes on the first side.
  • Flip it over, brush some more Simon's Secret Sauce on the steak, cover the grill again, and cook until it reaches your desired level of doneness. (An instant-read thermometer is the most accurate and easiest way to test this.)
  • Let the steak rest for 5 to 10 minutes after cooking.
  • Serve.
